Mediterranean salad, low carb side dish

Mediterranean salad

This is one of my favourite salads. It is packed with goodness, super tasty and very easy to make. You can serve it as a side dish with meat or fish, but it is also suitable to eat on its own for lunch. It can be quickly prepared in the morning to take to work.

Ingredients

1/2 of large cucumber
150 g baby plum tomatoes
1/2 of large yellow or orange pepper
a good handful of pitted green olives
1 large ball of mozzarella cheese (mine is 250g)
chopped dill and parsley
dried Italian herbs
squeeze of lemon
extra virgin olive oil
salt and pepper

Method

Cut all the veggies and the cheese into chunks of your preferred size, and mix together in a bowl, add herbs and seasoning, squeeze some lemon and drizzle with olive oil, combine all ingredients and that's it! 
Serve and enjoy!
