"Better than potato" low carb vegetable mash

This mash is truly better than potato mash! It is healthier, more aromatic and tastier! This is a comforting and filling low carb side dish.

Ingredients

1 large swede
1 large celeriac root
100 g butter
1 tsp dried dill
1/2 tsp turmeric (optional)
salt to your taste

Low carb Solyanka soup

Russian Solyanka soup recipe

This is my favourite soup! It is rich, full of flavour, thick, super satisfying and YUMMY!
I normally cook a large pot, and freeze any leftovers so it can be eaten later. 
This soup is one of the best examples of Russian cuisine and every housewife has her own recipe, so here is my low carb version.

Ingredients

1/4 large celeriac root (or 1/2 of a small one) (cut into small cubes)
2 l stock or water
1 onion (chopped)
1 carrot  (grated)
2 celery sticks (cut into small cubes)
2 garlic cloves (chopped)
200 g cooking chorizo sausage (cut into small cubes)
200 g pork ham or good quality pork sausage (cut into small cubes)
 5-6 medium pickled cucumbers (I prefer Polish ones)
70 g pitted olives
2 tbs tomato puree 
salt 
black pepper
fresh parsley and dill (chopped)
lemon (optional)

Mediterranean salad, low carb side dish

Mediterranean salad

This is one of my favourite salads. It is packed with goodness, super tasty and very easy to make. You can serve it as a side dish with meat or fish, but it is also suitable to eat on its own for lunch. It can be quickly prepared in the morning to take to work.

Ingredients

1/2 of large cucumber
150 g baby plum tomatoes
1/2 of large yellow or orange pepper
a good handful of pitted green olives
1 large ball of mozzarella cheese (mine is 250g)
chopped dill and parsley
dried Italian herbs
squeeze of lemon
extra virgin olive oil
salt and pepper

This is a very simple and quick recipe, well worth trying!


Ingredients

120 g salted butter ( softened)
1 egg (lightly beaten)
1 1/2 cups ground almonds
1/2 cup coconut flour
1/4 cup granulated xylitol
1 tsp vanilla extract

Low carb chocolate and vanilla panna cotta

This dessert is easy to make, but quite time consuming, as each layer needs time to set before the next layer can be poured over.

Ingredients

600 ml double cream
600 ml whole milk
2 heaped tbs cocoa powder
2 tsp vanilla extract
24 g (2 sachets) gelatin
4 heaped tbs xylitol
